If you don't own an air fryer, then the ability to make air fryer beef recipes, like these easy steak bites and steak fajitas, is a reason alone to buy one. This gorgeous dish will tug at the heartstrings of any meat lover. It's low-carb and keto-friendly too!

Sliced mushrooms give this protein-packed main dish an umami boost. But these steak pieces are equally delicious when cooked alongside potatoes or your favorite vegetable. We used a rub instead of a marinade, which also seasons the veggies and shortens the prep time.

The cup in the middle holds blue cheese dipping sauce, which takes this recipe over the top if you're a fan. But it's definitely optional. These flavorful steak bites stand alone.

You just can't beat air frying steak for taste and ease of clean-up. The outsides char and crisp up beautifully and rival what you cook on the grill. Meanwhile, it's easy to monitor cooking and ensure the middle is perfectly juicy and tender.

The best part? When this delicious meal is finished, simply place the air fryer basket in the dishwasher! The end.

Ingredients

You'll need a few simple ingredients to make these easy air fryer steak bites:

  • Sirloin steak - This is our favorite cut of steak for this recipe. See the section below for more options.
  • Steak seasoning - Any steak seasoning that you already enjoy will work. We used a Montreal seasoning like this one from Culinary Hill. Depending upon the brand, you may be able to use a little bit less, particularly if it's high in sodium. A simple combination of salt, black pepper, and garlic powder does the job too.
  • Olive Oil coats the cubes of beef before adding the rub. Avocado oil is an alternative.
  • Mushrooms - If you're not a fan, leave them out. Or add your favorite vegetable.

Best Type of Steak

Top sirloin steak filets deliver juicy steak bites every time. Beef tips, beef tenderloin, and NY strip steaks are also great choices.

Cut the meat into 1-inch to 1 ½-inch bite-sized pieces. I prefer the cubes on the thick side because it's easier to pull one out during cooking and gauge the remaining cooking time.

Tip: Aim for uniformly sized cubes so that they all finish at the same time.

We used Ninja (4-quart) and Cosori air fryers to make this recipe. The outcome may vary if you have a different brand or size air fryer. ALWAYS follow the instructions for your appliance and adjust the cooking process based on your experience. You will find lots of tips that will make this recipe successful no matter what type of air fryer is used.

Directions

Below are instructions and pictures to make juicy air fryer steak bites with mushrooms.

Step 1 - Pat meat dry and cut it into 1-inch bite-size pieces.

The wetness at the bottom of the package is myoglobin. It's not harmful. But, the oil and seasoning will adhere better to dry meat.

Step 2 - Toss meat cubes with olive oil and steak seasoning in a large bowl.

Guideline to scale the recipe: Use 1 Tablespoon of olive oil and 1 Tablespoon of seasoning for 1 pound of beef.

Step 3 - Cut mushrooms in thirds or in halves and add to the bowl with the beef cubes. Or add the beef cubes to the air fryer and then pour the mushrooms on top. Either way, shake to gently oil and season with mushrooms.

Note: You do not need to preheat the air fryer because it will come up to temperature quickly. However, if you want to take this step, preheat for 3 minutes before adding the beef cubes, and cut the cooking time back to 7 minutes.

Step 4 - Add beef cubes and mushrooms to the air fryer temperature and set the temperature to 390 degrees F and the timer to 9 minutes for medium-rare steak. The exact time will vary based on the thickness of the cubes and how you like to enjoy your steak.

Note: Ideally, the beef cubes should be in a single layer in the air fryer basket. If your appliance is on the small side, the meat and mushrooms can overlap a little. But, don't go overboard. Instead, cook the cubes in batches.

Step 5 - After 3 or 4 minutes, pause cooking and shake the basket. Take a peek and see how the steak is cooking. This is how mine looked.

Step 6 - Continue to pause, check, and shake at 2-minute intervals until the beef reaches the desired doneness. Once you've made the recipe a few times, you may only need to check halfway through!

Note: Continual shaking is critical if meat is not cooking in a single layer!This step is still necessary to check for doneness if you have a larger air fryer.

Step 7 - Lift steak bites and vegetables out to a serving platter. Allow meat to rest for a few minutes before enjoying it. Want to get fancy? Sprinkle fresh parsley over the top!

How to tell if beef cubes are done:

The best way to tell if beef is done is to check it with an instant-read meat thermometer. It will have a warm pink center (medium) at 145°F. That's the USDA recommendation on done versus safety.

If you don't have a meat thermometer, lift out a piece and cut it in half!

The internal temperature will continue to rise as the beef cubes rest. So, take that into consideration. I usually stop cooking at 130°F to 135°F. But I don't mind it on the rare side, either.

Storage and Reheating

  • Refrigerator - Store leftover steak bites in an airtight container for 3-4 days.
  • Reheat in the microwave. Place a wet paper towel over the steak on a microwave-safe plate. Heat at 50% power for 30-60 seconds and then repeat as needed until heated through.
  • Reheat in the air fryer. Add steak bites to the air fryer basket and cook at 350°F for 2-3 minutes until heated through.

  • 1 pound sirloin filet cut into 1 to 1-½ inch cubes
  • 1 Tablespoon olive oil
  • 1 Tablespoon steak seasoning
  • 8 ounces mushrooms

Instructions

  • Toss beef cubes with olive oil and steak seasoning.

  • Chop mushrooms in half or in thirds.

  • Pour beef cubes and mushrooms into the preheated air fryer and gently shake to combine.

  • Set air fryer temperature to 390°F and timer for 9 minutes.

  • After 3 minutes pass, pause and shake the basket. Do this again at 2-minute intervals until the beef cubes reach the desired doneness. Mine finished in 7 minutes. The time will vary by machine and based upon the thickness of the cubes. The best way to determine if the meat is done is to pause and check it. Lift a large piece out and test it with a meat thermometer or cut and peek in the middle to see the progress. Note that the meat will continue to cook once it is removed from the air fryer and is resting. Meat is medium at 145°F and has a warm pink center.

  • Allow the meat to rest a couple of minutes before serving and then enjoy!
