Step 1: Preheat oven to 375°F. Grease a baking sheet or use a silpat and place it on the baking sheet, set it aside.
Step 2: In the bowl of a food processor, using the chopping blade or blender, add the oatmeal, blend until the oats are finely ground oatmeal.
Step 3: In a medium mixing bowl, stir together the dry ingredients, blended oats, flour, salt, baking soda, and baking powder. Set aside.
Step 4: In the bowl of an electric mixer using the paddle attachment, or in a large mixing bowl, using a hand mixer, blend the white sugar, brown sugar, and softened butter. Blend until the sugar is well mixed into the sugar. At least 4-5 minutes.
Step 5: To finish the wet ingredients, mix in the eggs and vanilla extract to the butter mixture and combine well.
Step 6: To the wet ingredients, fold in the dry ingredients and gently blend until just combined.
Step 7: Fold in the chocolate chips, chopped chocolate bar, and chopped nuts into the cookie mix.
Step 7: Roll the dough into 2-inch cookie balls and place them onto a baking tray, 2 inches apart.
Step 8: Bake for 10 minutes, let cool a few minutes before moving to a cooling rack.

Store the cookies in a covered airtight container for up to 5 days after they are baked.
To freeze the cookies, once the cookie dough is prepared, make them into small dough balls. Place the balls on a baking tray in the freezer for about 1 hour. Then keep the dough balls in a freezer bag until ready to bake. Defrost and bake as directed in the recipe card.

Be sure the butter is soft when ready to mix for a nice creamy texture to the sugar/butter mixture.
Whenever adding flour to any cookie recipe, gently mix to create a tender cookie.
I've tried different chocolate bars, Hershey's milk chocolate bars give the best flavor. I also grate the chocolate bar so it melts nicely into the dough.

We highly recommend grinding the oatmeal to a fine powder in a food processor for a smooth dough.
Can I freeze the cookies?
Absolutely. We place the baked cookies on a baking sheet in the freezer in a single layer. Let them freeze for about 1 hour. Then place them in a freezer-safe bag or storage container. Defrost overnight in the refrigerator.

Ingredients
- 2 ½ cups old fashion rolled oats Note 1
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup granulated white sugar
- 1 cup light brown sugar, packed
- 1 cup unsalted butter, softened
- 2 large eggs, room temperature
- 1 ½ teaspoon pure vanilla extract
- 12 ounces semi-sweet chocolate chips
- 4 ounces milk chocolate bar
- 1 ½ cups walnuts, chopped

Instructions
Preheat oven to 375°F. Spray a baking sheet with non-stick spray or place a Silpat on the baking sheet, or use parchment paper on the baking sheet. Set aside,
To a blender or food processor bowl with the chopping blade attached, add the oatmeal, pulse until it is finely grounded, with a sandy texture. Set aside.
In a medium size mixing bowl, stir together the dry ingredients; ground oats (from step 2), flour, baking soda, baking powder, and salt.
In the bowl of an electric mixer using the paddle attachments or in a large mixing bowl, using a hand mixer with beaters attached cream white sugar, brown sugar, and softened butter. Blend until the sugar is well mixed into the butter, around 4-5 minutes.
Use the mixer to blend in the eggs and vanilla extract to combine ingredients.
To the egg mixture, mix in the dry ingredients to blend. Do not overmix ingredients.
Fold in the chocolate chips, chopped chocolate bar, and chopped nuts into the cookie mix.
Roll the dough into 2-inch cookie balls and place on the prepared baking tray, 2 inches apart.
Bake in the preheated oven for 10 minutes. Cookies will be golden brown and soft in the center. Let cool for a few minutes before transferring to a cooling rack to cool completely.
