ingredients
- 1⁄2 cup margarine or 1/2 cup butter, softened
- 2 cups sugar
- 1 cup oil
- 5 egg yolks, beaten
- 2 cups cake flour (pref. soft as silk cake flour if you can get it)
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 5 egg whites, stiffly beaten
- 1 can coconut (small, do not know how many ounces. This is all that the recipe gives)
- 1 cup chopped pecans

- 1⁄4 cup margarine or 1/4 cup butter, softened
- 1 (8 ounce) package cream cheese, softened
- 1 lb confectioners' sugar
- 1 cup chopped pecans

directions
- Cream 1/2 cup margarine or butter, sugar and oilin mixer bowl until light and fluffy.
- Add egg yolks, beat well.
- Sift in flour and soda; mix well.
- Add buttermilk and 1 tsp vanilla; mix well.
- Fold in egg whites, coconut and 1 cup pecans.
- Pour into 3 greased and floured 8" round cake pans.
- Bake at 350 degrees for 15 to 20 minutes or until cakes test done.
- Remove to wire rack to cool.
- Combine 1/4 cup butter or margarine, cream cheese and confectioner's sugar in a bowl; beat well.
- Stir in 1 tsp vanilla and 1 cup pecans.
- Spread between layers and over top and sides of cake.

Soft as Silk cake flour is not available in my area. I can get White Lily all purpose flour which is very fine or Swan Down cake flour. Which would be better?

This cake is fabulous! It falls into the category of one of the few desserts that is better than most chocolate desserts. I cannot say enough about how much my family loves it. It is truly one of the best scratch cake recipes I have ever found and I make it whenever I need a guaranteed-to-be good cake. It also works well as cupcakes, which tend to be better for potlucks. Even my Dad, who does not like cake, will eat this.

I've made two of these the first was a test and the test subjects devoured it. The second was made for an italian themed pot luck party they also scoffed it down!the next day I recieved emails for the recipe!!

This was the best cake I have ever had!! It is like eating a cloud....I did double the cream cheese icing. I wish I could give it 10 stars!!! :)

Really loved this cake, and so did eveyone at the gathering I went to. The only change I would make is the recipe calls for the nuts to be stirred into the icing, which really made it hard to put on the cake. Next time I am going to sprinkle the nuts on top and sides as the picture shows.

Delicious cake! FYI Everyone, a can of coconut is 3.5 ounces, so you can just get the shredded coconut in a bag and weigh it out. If you don't have a kitchen scale (and you really should have one!), that is approximately 1 1/4 cups. You're welcome!

To make it easier to decorate, I did not mix the chopped pecans into the icing, but instead pressed them onto the sides after icing the cake. I piped a star border around the bottom and a zigzag border around the top.

I upped the butter and added sour cream instead of using oil. OMG...it is amazing and so light!

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
